While the holiday season is often filled with busyness, I find making Christmas cookies is a way for me to slow down and be present. Simple sounds of mixing and baking in the kitchen. Enticing aroma of fresh baked cookies throughout our home.
This recipe is a family favorite...well, at least, it is one of my favorites.
Molasses Crinkle Cookies
3/4 cup shortening
2 cups sugar + extra to coat cookie dough
1 egg
2 1/4 cups flour
1/4 teaspoon salt
2 teaspoons soda
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon ginger
4 tablespoons molasses
Preheat oven to 325 degrees. Using a mixer, cream shortening and sugar. Add egg. Sift dry ingredients together. Mix thoroughly with shortening/sugar mixture. Add molasses and mix well. Shape into 1 inch balls. Roll in white sugar. Place on cookie baking sheets with parchment paper. I often use AirBake cookie sheets. Bake for 11 to 12 minutes. Cookies should flatten some and "crinkle." Enjoy!
